Vietnamese Rice Paper Rolls with Peanut Sauce
Serves 6 30 min prep 5 min cook

Fresh Vietnamese-style rice paper rolls packed with prawns, noodles, herbs and vegetables and served with creamy peanut dipping sauce.
Ingredients
- 12 rice paper wrappers
- 250 g cooked prawns, halved lengthways
- 100 g rice vermicelli noodles
- 1 carrot, cut into fine strips
- 1/2 cucumber, cut into fine strips
- 1 cup fresh mint and coriander leaves
- 1 cup shredded lettuce
- 4 tbsp smooth peanut butter
- 2 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 tbsp lime juice
- warm water as needed for the sauce
Method
- Cook the rice noodles according to the packet instructions, drain and cool.
- Mix the peanut butter, hoisin, soy sauce and lime juice.
- Thin the dipping sauce with a little warm water until smooth.
- Dip one rice paper wrapper briefly in warm water and place it on a clean board.
- Arrange prawns, noodles, vegetables and herbs across the lower third.
- Fold in the sides and roll tightly.
- Repeat with the remaining wrappers.
- Serve fresh with the peanut dipping sauce.
