Traditional Tomato Bredie

Traditional Tomato Bredie

A deeply comforting South African mutton bredie slowly cooked with ripe tomatoes, potatoes and aromatic spices.

Ingredients

  • 1 kg mutton or lamb stewing pieces
  • 3 tbsp olive oil
  • 2 onions, chopped
  • 2 cloves garlic, finely chopped
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 2 bay leaves
  • 2 tbsp tomato paste
  • 1 kg ripe tomatoes, chopped
  • 1 tbsp brown sugar
  • 400 ml beef or mutton stock
  • 500 g potatoes, peeled and cut into chunks
  • salt and freshly ground black pepper to taste

Method

  1. Heat the oil in a heavy-based saucepan and brown the meat in batches.
  2. Remove the meat and cook the onions until soft.
  3. Add the garlic, coriander, cumin, cinnamon and bay leaves and cook for 1 minute.
  4. Stir in the tomato paste, tomatoes, sugar and stock.
  5. Return the meat to the saucepan and bring to a simmer.
  6. Cover and cook gently for 1 1/2 to 2 hours until the meat is almost tender.
  7. Add the potatoes and cook for another 30 to 40 minutes until tender.
  8. Season to taste and serve with rice.
