Traditional Tomato Bredie
Serves 6 20 min prep 150 min cook

A deeply comforting South African mutton bredie slowly cooked with ripe tomatoes, potatoes and aromatic spices.
Ingredients
- 1 kg mutton or lamb stewing pieces
- 3 tbsp olive oil
- 2 onions, chopped
- 2 cloves garlic, finely chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 2 bay leaves
- 2 tbsp tomato paste
- 1 kg ripe tomatoes, chopped
- 1 tbsp brown sugar
- 400 ml beef or mutton stock
- 500 g potatoes, peeled and cut into chunks
- salt and freshly ground black pepper to taste
Method
- Heat the oil in a heavy-based saucepan and brown the meat in batches.
- Remove the meat and cook the onions until soft.
- Add the garlic, coriander, cumin, cinnamon and bay leaves and cook for 1 minute.
- Stir in the tomato paste, tomatoes, sugar and stock.
- Return the meat to the saucepan and bring to a simmer.
- Cover and cook gently for 1 1/2 to 2 hours until the meat is almost tender.
- Add the potatoes and cook for another 30 to 40 minutes until tender.
- Season to taste and serve with rice.
