Samoosas
Serves 24 90 min prep 15 min cook

Crisp homemade samoosas filled with fragrant spiced beef mince and fresh herbs.
Ingredients
- 10 sheets spring roll pastry
- 1/4 cup water
- 15 g flour
- 1 litre sunflower oil for frying
- 500 g beef mince
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1.5 cm fresh ginger, grated
- 2 tbsp garam masala
- 2 tbsp curry powder
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- sea salt
- freshly ground black pepper
- 3 tbsp fresh mint, chopped
- 3 tbsp fresh coriander, chopped
Method
- Heat the olive oil and cook the onion and ginger until softened.
- Add the mince and cook until browned.
- Stir in the garam masala, curry powder, cumin and coriander.
- Season with salt and pepper and cook until the filling is fairly dry.
- Stir in the mint and coriander and allow the filling to cool.
- Mix the flour and water to make a sealing paste.
- Cut and fold the pastry into pockets and fill each with the mince mixture.
- Seal the edges with the flour paste.
- Heat the sunflower oil and fry the samoosas until crisp and golden.
- Drain on paper towel before serving.
