Rooibos & Coffee-Rubbed Braai Steak
Serves 4 10 min prep 12 min cook

A bold South African steak rub combining rooibos, coffee, coriander and brown sugar to create a smoky caramelised crust.
Ingredients
- 4 thick-cut rump or sirloin steaks
- 1 tbsp finely ground rooibos tea
- 1 tbsp finely ground coffee
- 1 tbsp brown sugar
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1 tsp coarse salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Method
- Combine the rooibos, coffee, sugar, coriander, paprika, salt and pepper.
- Lightly coat the steaks with olive oil.
- Press the spice mixture firmly onto both sides of the steaks.
- Allow the steaks to stand for 20 minutes.
- Braai over hot coals for 3 to 5 minutes per side depending on thickness and preferred doneness.
- Move away from direct heat if the crust begins to darken too quickly.
- Rest the steaks for at least 5 minutes.
- Slice across the grain and serve.
