Ouma's Quince Preserve
Serves 20 30 min prep 120 min cook

Slow-cooked kwepers turn from pale gold to a glorious ruby-red in this fragrant old-fashioned preserve.
Ingredients
- 1 kg quinces, peeled, cored and quartered
- 1 kg white sugar
- 1 litre water
- 1 lemon, juiced
- 1 cinnamon stick
Method
- Place the quince pieces in water as they are prepared to prevent discolouration.
- Cook them gently in fresh water until just tender.
- Drain while reserving the cooking liquid.
- Make a syrup with the sugar and measured cooking liquid.
- Add the quince and cinnamon.
- Simmer very slowly until the fruit turns deep pink to ruby and the syrup thickens.
- Add lemon juice.
- Pack into sterilised jars and cover with syrup.
