Ouma's Quince Preserve

Slow-cooked kwepers turn from pale gold to a glorious ruby-red in this fragrant old-fashioned preserve.

Ingredients

  • 1 kg quinces, peeled, cored and quartered
  • 1 kg white sugar
  • 1 litre water
  • 1 lemon, juiced
  • 1 cinnamon stick

Method

  1. Place the quince pieces in water as they are prepared to prevent discolouration.
  2. Cook them gently in fresh water until just tender.
  3. Drain while reserving the cooking liquid.
  4. Make a syrup with the sugar and measured cooking liquid.
  5. Add the quince and cinnamon.
  6. Simmer very slowly until the fruit turns deep pink to ruby and the syrup thickens.
  7. Add lemon juice.
  8. Pack into sterilised jars and cover with syrup.
