Malva Pudding
Serves 8 30 min

Ingredients
- 1 tbsp butter, room temperature
- 1 cup brown sugar
- 4 tbsp apricot jam
- 1 large egg
- 1 cup milk
- 2 tbsp vinegar
- 2 tsp vanilla essence
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tbsp butter
- 125 ml cream
- 4 tbsp brown sugar
- 2 tbsp water
Method
- Preheat the oven to 180°C.
- Place the butter, brown sugar, apricot jam and egg in a large bowl and beat until lighter and slightly fluffy.
- In a separate container, combine the milk, vinegar and vanilla essence and whisk lightly.
- In another bowl or measuring container, stir the baking soda into the flour.
- Alternately add the milk mixture and flour mixture to the main bowl, mixing well as you go.
- Pour the batter into a lightly greased ovenproof dish.
- Bake for 45 minutes, until the pudding is cooked but still has a soft, spongy texture.
- For the sauce, combine the butter, cream, brown sugar and water in a saucepan and bring to the boil.
- Simmer the sauce for 3 minutes while stirring continuously.
- Pierce the baked pudding several times with a fork, then slowly pour the sauce over it so that it can soak in.
