Jamie’s Classic Family Lasagne
Serves 12

Ingredients
- 2 sprigs fresh rosemary
- 100 g smoked streaky bacon
- Olive oil
- 1 kg minced beef
- 1 kg minced pork
- 4 carrots
- 2 onions
- 4 celery sticks
- 2 heaped tbsp tomato purée
- 4 x 400 g tins plum tomatoes
- 350 g dried lasagne sheets
- 150 g mature Cheddar
- 2 medium leeks
- 2 fresh bay leaves
- 4 tbsp plain flour
- 1 litre semi-skimmed milk
- 1 whole nutmeg
Method
- Chop rosemary and bacon.
- Fry them in olive oil.
- Add beef and pork mince.
- Cook until liquid evaporates.
- Grate the Cheddar.
- Finely chop carrots and onions.
- Add them to the mince.
- Add finely chopped celery.
- Cook until vegetables soften.
- Add tomato purée and tomatoes.
- Add water from the tomato tins.
- Simmer gently for about 2 hours.
- Slice the leeks.
- Cook leeks with bay leaves.
- Stir in flour and milk.
- Cook until sauce thickens.
- Blend sauce until smooth.
- Add half the cheese and nutmeg.
- Heat oven to 190°C.
- Season the ragù.
- Reserve half the ragù for freezing.
- Layer ragù in a deep dish.
- Add white sauce and lasagne sheets.
- Repeat the layers three times.
- Finish with white sauce.
- Top with remaining cheese.
- Bake for 45 minutes.
- Rest for 5–10 minutes.
