Easy Peach Cobbler with Vanilla Ice Cream

Juicy peaches baked beneath a buttery golden cobbler topping, served warm with melting vanilla ice cream.

Ingredients

  • 2 410 g cans sliced peaches, drained
  • 120 g caster sugar
  • 1 tsp ground ginger
  • 150 g cake flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 150 g cold butter, cubed
  • 1 small egg
  • vanilla ice cream for serving

Method

  1. Preheat the oven to 180°C and grease a medium baking dish.
  2. Arrange the drained peach slices in the dish.
  3. Sprinkle the peaches with 2 tablespoons of the caster sugar and the ground ginger.
  4. Combine the flour, remaining sugar, baking powder, cinnamon and a pinch of salt.
  5. Rub or pulse in the cold butter until the mixture resembles breadcrumbs.
  6. Add the egg and mix until a thick dough forms.
  7. Drop spoonfuls of dough over the peaches, leaving a few small gaps between them.
  8. Sprinkle lightly with extra caster sugar.
  9. Bake for about 40 minutes until the topping is golden and the peaches are bubbling.
  10. Serve warm with vanilla ice cream.
