Easy Peach Cobbler with Vanilla Ice Cream

Juicy peaches baked beneath a buttery golden cobbler topping, served warm with melting vanilla ice cream.
Ingredients
- 2 410 g cans sliced peaches, drained
- 120 g caster sugar
- 1 tsp ground ginger
- 150 g cake flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 150 g cold butter, cubed
- 1 small egg
- vanilla ice cream for serving
Method
- Preheat the oven to 180°C and grease a medium baking dish.
- Arrange the drained peach slices in the dish.
- Sprinkle the peaches with 2 tablespoons of the caster sugar and the ground ginger.
- Combine the flour, remaining sugar, baking powder, cinnamon and a pinch of salt.
- Rub or pulse in the cold butter until the mixture resembles breadcrumbs.
- Add the egg and mix until a thick dough forms.
- Drop spoonfuls of dough over the peaches, leaving a few small gaps between them.
- Sprinkle lightly with extra caster sugar.
- Bake for about 40 minutes until the topping is golden and the peaches are bubbling.
- Serve warm with vanilla ice cream.
