Easy Dark Chocolate Mousse
Serves 4 10 min prep 2 min cook

A light yet deeply chocolatey mousse made with dark chocolate and whipped egg whites, perfect for preparing ahead.
Ingredients
- 150 g 70% dark chocolate
- 6 egg whites
- 2 tbsp caster sugar
- 4 tbsp crème fraîche or whipped cream
- grated dark chocolate for serving
Method
- Melt the dark chocolate gently in the microwave or over a bowl of barely simmering water and allow it to cool slightly.
- Whisk the egg whites until soft peaks form.
- Add the sugar and continue whisking until glossy stiff peaks form.
- Mix about one-third of the egg whites firmly into the chocolate to loosen it.
- Gently fold in the remaining egg whites without knocking out too much air.
- Spoon into four glasses or ramekins.
- Refrigerate for 2 to 3 hours until set.
- Serve with crème fraîche or whipped cream and grated chocolate.
