Durban-Style Chicken Curry with Rice

A fragrant Durban-inspired chicken curry with potatoes, tomatoes and warming spices, served with fluffy rice.

Ingredients

  • 1 kg chicken pieces
  • 2 tbsp vegetable oil
  • 2 onions, finely chopped
  • 3 cloves garlic, crushed
  • 1 tbsp fresh ginger, grated
  • 2 tbsp medium curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 500 g potatoes, peeled and cubed
  • 500 ml chicken stock or water
  • 2 tbsp fresh coriander, chopped
  • salt to taste
  • cooked rice for serving

Method

  1. Heat the oil in a large saucepan and brown the chicken pieces.
  2. Remove the chicken and cook the onions until golden.
  3. Add the garlic, ginger, curry powder, turmeric, cumin and coriander.
  4. Cook the spices for 1 minute until fragrant.
  5. Add the tomatoes and tomato paste and cook for 5 minutes.
  6. Return the chicken to the saucepan.
  7. Add the potatoes and stock and bring to a simmer.
  8. Cover and cook for 35 to 40 minutes until the chicken and potatoes are tender.
  9. Season to taste and sprinkle with fresh coriander.
  10. Serve hot with rice.
