Durban-Style Chicken Curry with Rice

A fragrant Durban-inspired chicken curry with potatoes, tomatoes and warming spices, served with fluffy rice.
Ingredients
- 1 kg chicken pieces
- 2 tbsp vegetable oil
- 2 onions, finely chopped
- 3 cloves garlic, crushed
- 1 tbsp fresh ginger, grated
- 2 tbsp medium curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tomatoes, chopped
- 2 tbsp tomato paste
- 500 g potatoes, peeled and cubed
- 500 ml chicken stock or water
- 2 tbsp fresh coriander, chopped
- salt to taste
- cooked rice for serving
Method
- Heat the oil in a large saucepan and brown the chicken pieces.
- Remove the chicken and cook the onions until golden.
- Add the garlic, ginger, curry powder, turmeric, cumin and coriander.
- Cook the spices for 1 minute until fragrant.
- Add the tomatoes and tomato paste and cook for 5 minutes.
- Return the chicken to the saucepan.
- Add the potatoes and stock and bring to a simmer.
- Cover and cook for 35 to 40 minutes until the chicken and potatoes are tender.
- Season to taste and sprinkle with fresh coriander.
- Serve hot with rice.
