Chocolate Fondant with Molten Centre

Rich individual chocolate cakes with delicate baked edges and a warm molten chocolate centre.

Ingredients

  • 50 g melted butter for preparing the moulds
  • 2 tbsp cocoa powder for dusting
  • 200 g good-quality dark chocolate, chopped
  • 200 g butter
  • 200 g caster sugar
  • 4 large eggs
  • 4 large egg yolks
  • 200 g cake flour
  • vanilla ice cream for serving

Method

  1. Brush nine small pudding moulds generously with melted butter and chill briefly.
  2. Brush them a second time, then dust the insides thoroughly with cocoa.
  3. Melt the chocolate and butter together gently and stir until smooth.
  4. Allow the chocolate mixture to cool for about 10 minutes.
  5. Whisk the eggs, yolks and caster sugar until thick and pale.
  6. Sift in the flour and mix gently.
  7. Gradually fold the melted chocolate mixture into the eggs.
  8. Divide between the prepared moulds and chill for at least 20 minutes.
  9. Preheat the oven to 200°C.
  10. Bake for 10 to 12 minutes until a crust has formed but the centres remain soft.
  11. Rest for 1 minute, carefully turn out and serve immediately with vanilla ice cream.
