Chocolate Fondant with Molten Centre
Serves 9 30 min prep 12 min cook

Rich individual chocolate cakes with delicate baked edges and a warm molten chocolate centre.
Ingredients
- 50 g melted butter for preparing the moulds
- 2 tbsp cocoa powder for dusting
- 200 g good-quality dark chocolate, chopped
- 200 g butter
- 200 g caster sugar
- 4 large eggs
- 4 large egg yolks
- 200 g cake flour
- vanilla ice cream for serving
Method
- Brush nine small pudding moulds generously with melted butter and chill briefly.
- Brush them a second time, then dust the insides thoroughly with cocoa.
- Melt the chocolate and butter together gently and stir until smooth.
- Allow the chocolate mixture to cool for about 10 minutes.
- Whisk the eggs, yolks and caster sugar until thick and pale.
- Sift in the flour and mix gently.
- Gradually fold the melted chocolate mixture into the eggs.
- Divide between the prepared moulds and chill for at least 20 minutes.
- Preheat the oven to 200°C.
- Bake for 10 to 12 minutes until a crust has formed but the centres remain soft.
- Rest for 1 minute, carefully turn out and serve immediately with vanilla ice cream.
