Chocolate Brownie Self-Saucing Pudding

A rich chocolate pudding with a brownie-like top and warm fudgy sauce underneath, made for serving with vanilla ice cream.
Ingredients
- 150 g cake flour
- 40 g cocoa powder
- 2 tsp baking powder
- 150 g caster sugar
- 125 ml milk
- 75 g butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 100 g dark chocolate, roughly chopped
- 100 g brown sugar
- 25 g cocoa powder for the sauce
- 300 ml boiling water
Method
- Preheat the oven to 180°C and lightly grease a medium baking dish.
- Combine the flour, cocoa, baking powder and caster sugar.
- Whisk together the milk, melted butter, egg and vanilla.
- Stir the wet ingredients into the dry ingredients until just combined, then fold in the chopped chocolate.
- Spread the batter into the prepared dish.
- Combine the brown sugar and additional cocoa and sprinkle evenly over the batter.
- Carefully pour the boiling water over the back of a spoon onto the pudding without stirring.
- Bake for 30 to 35 minutes until the top is set but the pudding remains saucy underneath.
- Rest for 5 minutes and serve warm with vanilla ice cream or cream.
