Chicken Satay Skewers with Peanut Sauce

Tender spiced chicken skewers served with a creamy coconut peanut dipping sauce - an easy crowd-pleasing starter.

Ingredients

  • 600 g boneless skinless chicken thighs, cubed
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tbsp vegetable oil
  • 3 tbsp smooth peanut butter
  • 165 ml coconut milk
  • 1 tbsp soy sauce for the sauce
  • 1 tsp honey
  • 1/2 lime, juiced

Method

  1. Mix the soy sauce, brown sugar, coriander, cumin and vegetable oil.
  2. Add the chicken and marinate for at least 30 minutes.
  3. Thread the chicken onto soaked wooden skewers.
  4. Grill or pan-fry over high heat until charred and cooked through.
  5. For the sauce, combine the peanut butter, coconut milk, soy sauce, honey and lime juice.
  6. Heat gently while stirring until smooth.
  7. Add a splash of water if the sauce becomes too thick.
  8. Serve the hot chicken skewers with the peanut sauce.
