Chicken Satay Skewers with Peanut Sauce
Serves 6 25 min prep 12 min cook

Tender spiced chicken skewers served with a creamy coconut peanut dipping sauce - an easy crowd-pleasing starter.
Ingredients
- 600 g boneless skinless chicken thighs, cubed
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tbsp vegetable oil
- 3 tbsp smooth peanut butter
- 165 ml coconut milk
- 1 tbsp soy sauce for the sauce
- 1 tsp honey
- 1/2 lime, juiced
Method
- Mix the soy sauce, brown sugar, coriander, cumin and vegetable oil.
- Add the chicken and marinate for at least 30 minutes.
- Thread the chicken onto soaked wooden skewers.
- Grill or pan-fry over high heat until charred and cooked through.
- For the sauce, combine the peanut butter, coconut milk, soy sauce, honey and lime juice.
- Heat gently while stirring until smooth.
- Add a splash of water if the sauce becomes too thick.
- Serve the hot chicken skewers with the peanut sauce.
