Cape Gooseberry Jam
Serves 16 15 min prep 30 min cook

A bright golden jam made from tart-sweet Cape gooseberries with just enough lemon to sharpen their naturally tropical flavour.
Ingredients
- 1 kg Cape gooseberries, husks removed
- 750 g white sugar
- 2 tbsp lemon juice
- 100 ml water
Method
- Wash the gooseberries and place them in a heavy saucepan with the water.
- Cook gently for about 10 minutes until the fruit begins to burst.
- Add the sugar and stir over low heat until dissolved.
- Increase the heat and boil until the jam reaches setting point.
- Stir in the lemon juice.
- Remove any foam from the surface.
- Bottle hot in sterilised jars.
