Burrata with Heirloom Tomatoes and Basil Oil

Creamy burrata served with ripe tomatoes, fragrant basil dressing and extra-virgin olive oil for an elegant no-fuss starter.
Ingredients
- 500 g ripe mixed or heirloom tomatoes
- 250 g burrata
- 1 cup fresh basil leaves
- 80 ml extra-virgin olive oil
- 1 tbsp red wine or rice vinegar
- sea salt and freshly ground black pepper to taste
- crusty bread for serving
Method
- Cut the tomatoes into wedges and season lightly with salt.
- Allow them to stand for about 10 minutes to release some of their juices.
- Blend or finely chop most of the basil with the olive oil.
- Stir the vinegar into the basil oil and season to taste.
- Arrange the tomatoes on a serving plate.
- Tear the burrata over the tomatoes.
- Drizzle generously with basil oil.
- Finish with fresh basil leaves and black pepper and serve with crusty bread.
