Burrata with Heirloom Tomatoes and Basil Oil

Creamy burrata served with ripe tomatoes, fragrant basil dressing and extra-virgin olive oil for an elegant no-fuss starter.

Ingredients

  • 500 g ripe mixed or heirloom tomatoes
  • 250 g burrata
  • 1 cup fresh basil leaves
  • 80 ml extra-virgin olive oil
  • 1 tbsp red wine or rice vinegar
  • sea salt and freshly ground black pepper to taste
  • crusty bread for serving

Method

  1. Cut the tomatoes into wedges and season lightly with salt.
  2. Allow them to stand for about 10 minutes to release some of their juices.
  3. Blend or finely chop most of the basil with the olive oil.
  4. Stir the vinegar into the basil oil and season to taste.
  5. Arrange the tomatoes on a serving plate.
  6. Tear the burrata over the tomatoes.
  7. Drizzle generously with basil oil.
  8. Finish with fresh basil leaves and black pepper and serve with crusty bread.
