Bobotie Spring Rolls with Chutney
Serves 8 40 min prep 35 min cook

Crispy spring rolls filled with fragrant South African bobotie-style beef mince, chutney and warm Cape spices.
Ingredients
- 500 g beef mince
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 1 tbsp fresh ginger, grated
- 2 tsp medium curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 2 tbsp fruit chutney
- 1 tbsp apricot jam
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 16 spring roll wrappers
- 1 egg, beaten with 1 tbsp water
- vegetable oil for frying
- fruit chutney for serving
Method
- Cook the onion in a little oil until soft.
- Add the garlic, ginger, curry powder, turmeric and cumin and cook for 1 minute.
- Add the beef mince and cook until browned.
- Stir in the chutney, apricot jam, tomato paste and Worcestershire sauce.
- Cook gently until the mixture is rich and fairly dry.
- Allow the filling to cool completely.
- Place a spoonful of filling near one corner of each wrapper.
- Fold in the sides, roll tightly and seal with egg wash.
- Fry in hot oil until golden and crisp.
- Drain well and serve with fruit chutney.
