Bobotie Spring Rolls with Chutney

Bobotie Spring Rolls with Chutney

Crispy spring rolls filled with fragrant South African bobotie-style beef mince, chutney and warm Cape spices.

Ingredients

  • 500 g beef mince
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tbsp fresh ginger, grated
  • 2 tsp medium curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 2 tbsp fruit chutney
  • 1 tbsp apricot jam
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 16 spring roll wrappers
  • 1 egg, beaten with 1 tbsp water
  • vegetable oil for frying
  • fruit chutney for serving

Method

  1. Cook the onion in a little oil until soft.
  2. Add the garlic, ginger, curry powder, turmeric and cumin and cook for 1 minute.
  3. Add the beef mince and cook until browned.
  4. Stir in the chutney, apricot jam, tomato paste and Worcestershire sauce.
  5. Cook gently until the mixture is rich and fairly dry.
  6. Allow the filling to cool completely.
  7. Place a spoonful of filling near one corner of each wrapper.
  8. Fold in the sides, roll tightly and seal with egg wash.
  9. Fry in hot oil until golden and crisp.
  10. Drain well and serve with fruit chutney.
